Day 3

Today was a crazy day! We had an Open House because we just put our house on the market. So I spent all morning cleaning and all afternoon staying away from home.

I knew I needed to go to Curves first thing in the morning so I could still have time to clean my house. I woke up hungry and didn’t want to work out on an empty stomach so I made a morning shake. Big mistake! I kinda felt like barfing my whole workout. Still, I got my workout in and that little smart card at Curves made me push myself.

I spent my morning cleaning and stuffing junk into closets (hopefully no one got hurt when the opened our cupboards). I was running late (as always) and didn’t have time to make lunch so I made another shake for lunch and grabbed an apple and the leftover Rocket Fuel cookies.

My nephews birthday party was today. I drank my shake on the way, but got pretty hungry after a couple of hours watching everyone else eat pizza, cake and my favorite – ice cream. I left the party to run some errands and needed some food badly. I think I made a pretty good choice at Chick-fil-A and ordered a protein style chicken sandwich and a cup of fruit.

I ran a bunch of errands and didn’t get home ’till late, but picked up some green beans from Whole Foods on my way home. I was hoping for something more substantial bet nearly everything in the ready-to-eat section of Whole Foods has sugar in it. Boo.

Anyways, I finished up my day with Whole Food’s green beans, peppers & mushrooms. And some apple pie I made a few days ago.

I think this pie turned out pretty good. I think I would use more apple next time, and maybe less honey. I made the Almond Flour Pie Crust from The Food Lover’s Kitchen. I LOVE that pie crust! Then I took about 6-7 granny smith apples, peeled, cored and diced, then cooked with 1/3 or 1/2 c. of honey and 1T arrowroot powder until the apples they were soft and the juices had thickened a little. I let the apples cool a little then added them to the pie.

I ended my day exhausted and felt like an old lady with aching joints and all…

Day 2

I started off today with my favorite Paleo treat. A chocolate “milkshake” made with 1c. almond milk, 1-2t. unsweetened cocoa and 1 large frozen banana. Sooo good. I have to say though, I bought the almond milk from Costco that comes warm. It is not nearly as good as the stuff in the cold section. I’m not sure why… I like the plain, unsweetened stuff from the cold section.

I drank this in the car on the way to drop of my boys at preschool. Then I went on the trail for a walk with my friend, Jen. We ran into my grandparents who are in their 70s but act like they are in their 60s and it reminded me why I am doing this. I want to feel 60 when I am 70 too!

I ate an apple for a snack (do you really need a picture?) For lunch I brought out my sweet potato, sausage mixture from yesterday and added two scrambled eggs.

I used my fair trade cocoa to make brownies today. I LOVE this recipe from PaleOMG! I tried them without the chocolate chips this time. I added a little more cocoa and honey. Definitely not as good without the chocolate chips, also I am kind of getting tired of the strong honey taste in things lately… Still pretty good though.

I also had an afternoon snack of an apple and a piece of beef jerky.

I knew I was going out tonight for a sisters dinner, woo hoo! So I planned ahead. I looked up the menu of the restaurant we were going to, and decided on the salad with apples, blue cheese, pecans and chicken. I brought my own dressing! I was so proud of myself 🙂 I made the dressing with 2t. olive oil, 1t. pomegranate vinegar and 1t. agave nectar. It did feel a little weird taking a little tupperware of dressing out of my purse, but who cares, right?

Here’s the salad. I pared it with a glass of Pinot Grigio. Mmmm.

I had a great night with my sisters and with a little planning ahead felt completely satisfied with my healthy choice.

I wasn’t as hungry feeling today. I had a little less energy in the early afternoon but got a splurge of energy later in the day and had fun dancing around the house with my boys to One Republic’s Feel Again. Well my kids danced; I kind of hopped around…

And that’s a wrap for today. A workout at Curves is on the agenda for tomorrow morning. I’m posting it now so I actually stick to it!

Day 1

Woo hoo! My first day of 60!

I didn’t plan very well for today. I didn’t have time to make eggs in the morning and didn’t have any frozen bananas for a smoothie so I grabbed an apple. Better than nothing and oh so healthy.

Then I had a late breakfast. I made this concoction a few days ago.

Onion, Green Pepper, Sweet Potato, Italian Sausage I cooked it and stored it in the frig for easy access.

I cooked it up with two eggs and voila.

I ordered some fair trade chocolate for Halloween this year. It was sitting on my table calling my name all morning but I resisted the temptation. I took a picture so you could be tempted too. I also ordered some fair trade unsweetened cocoa, so I will have to experiment with some chocolate recipes I can eat!

I ate my breakfast so late that I didn’t have lunch. But I tried a recipe from my new cookbook, Everyday Paleo Family Cookbook by Sarah Fragoso. Which I highly recommend so far. Great info on the Paleo diet and great pictures of each recipe! I made the Rocket Fuel cookies with my 4-year-old. Yum!!!

I made my own Paleo version of Stuffed Peppers for dinner, with cauliflower instead of rice. I think they turned out pretty good. And I tried another recipe from Everyday Paleo. The Sweet Potato Chips. Mmmm.

That’s it for today. I have to say, I have been feeling kind of hungry/not satisfied all day. I guess that is why this is called a challenge 🙂
